Momma Jah's Pastelillos

Pastelillos!!!!!  One of my all time favorite especial occasion foods growing up Veganized. 
The real deal. No discos in this disco. The flake was unreal. 
 
What you'll  need
Momma Jash's Adobo 
Flour 
Baking soda
Cold plant based butter (we use Earth balance soy free) 
Ice cold water
Textured Vegetable Protein
Sofrito

parcment paper  
rolling pin 
 Dough:
In mixing bowl add 2 cups flour, 1.5 teaspoons baking soda, 1 tablespoon & 1 Teaspoon of Momma Jah's Adobo.
Mix well
Add 1/2 cup of cold plant based butter and cut it into your flour with your fingers until you have a crumbly sandy consistency
Add 
Ice cold water a tablespoon at at time will mixing with your hands until dough forms. 
Cut dough into 4's and sit in the fridge. Start working on the filling while the dough is chilling out.
Filling: You can use any filling you wish. You will usually find Pastelillos filled with seasoned ground something or cheese. I love mixing it up, but for a more traditional yet vegan version we are going with textured vegetable protein or T.V.P. for short. T.V.P. comes as dried crumbles, and can be found in most stores. We used Bob's Red Mill for this recipe.
Measure and add 1 cup of crumbles to a mixing bowl with 1 cup of warm water, 2 teaspoons of Momma Jah's Adobo, 1 teaspoon of liquid smoke and 2 tablespoons of Momma Jah's sofrito (recipe coming soon so, I will forgive you for using another brand... for now).
 Once your T.V.P. has soaked up all of your yummy, flavorful goodness add it to a heated (medium high)  cast iron pan with 2 tablespoons of olive oil.
Cook, stirring occasionally until your grounds are fragrant, getting color and crisp, approximately 12 mins.
Put to the side while you finish rolling. Make sure your filling has cooled before you add it to your dough. 
Now Back to rolling

Roll dough a quarter inch thick on a floured surface and cut onto rounds. I use a mason jar for this part.
Roll rounds a bit more between two sheets of parchment paper.
Add 1 tablespoon cooled filling slightly off center to your dough round leaving enough space for a rim. 
Fold your round over matching up the sides.

Press the edges using a fork to create a seal. 
Place your uncooked Pastelillos on your parchment paper while you heat your oil. 
We fry these babies in a large cast iron skillet because your Momma (Me) raised you right.
Make sure to only fry a few at a time as to ensure the temperature of the oil doesn't drop significantly. Warm instead of hot oil will give you soggy Pastelillos and you dont want that.
 
They only take 3-4 mins on each side. 
Place on a paper towel or paper bag (UPCYCLE) to drain any exes oil and sprinkle a little Momma Jah's for a finishing touch. 
Great as a side or a snack. These can be frozen and brought back to life in the air fryer.
